for the recipe I used last night. Here it is, plus the link to the original. I did change mine and will note my changes beside the ingredients.
Ingredients:
Servings:
- 1 (16 ounce) boneless skinless chicken breasts, grilled (I used roasted )
- 3 tablespoons butter
- 20 medium raw shrimp, peeled, tail removed, and cleaned (I used frozen, thawed cleaned jumbo shrimp, I only had to remove the tails)
- 1 cup fresh button mushrooms, cleaned and sliced (I used canned stems and pieces)
- 1 cup sun-dried tomatoes, sliced (left out, I hate them!)
- 1 to taste salt and pepper, to taste
- 3 cups heavy cream (I used 2% milk but only 2 cups)
- 1/2 cup romano cheese, grated
- 1 1/2 teaspoons cayenne pepper (I only used 1 tsp and it was great!)
- 1 (16 ounce) dry penne pasta
Directions:
Prep Time: 15 mins
Total Time: 35 mins
Total Time: 35 mins
- 1 Season and grill the chicken breasts until done. Cool and slice into bite sized pieces.
- 2 Add butter to a large sauté pan on medium heat.
- 3 Once butter is melted, add the shrimp, sliced chicken, mushrooms, sun-dried tomatoes, salt and pepper.
- 4 Saute mixture until shrimp and mushrooms are cooked.
- 5 Add the cream, Romano cheese and cayenne pepper. Let cream reduce by half while stirring frequently.
- 6 Meanwhile, cook pasta al dente according to package directions; drain excess water.
- 7 Toss cooked pasta with contents of sauté pan. Serve.
Usually if 2 of us go to Carino's for supper we spend over $50. This meal fed 3 with leftovers for lunch for about $15.Now I did spend more, but things like the Romano cheese gave me a bunch left for other things. The break down would be something like this
Chicken $2
Shrimp $6
Cheese $2
Milk $1.50
Mushrooms $1.50
Cayenne .50
Butter .50
Pasta $1
_____________
$15
Also I bought a rotisserie chicken so I have the dark meat left for another dish.
enjoy!
